Ethiopia taro (Colocasia esculenta) is a tuber that thrives in the south and the western highlands of the horn of Africa country. Locals use it for subsistence reasons while the surplus goes to the local markets for sale. Worldwide, the root crop goes under various names: the most common is elephant-ear, which details the large ears or leaves of the fresh water plant. Botanists think that the crop is among the first to be domesticated from its southeast Asia origin, from where it spread to, among others, Eastern Africa.

Eating taro is beneficial to health in many ways ranging from improved digestion to lessened high glucose levels. It also contains antioxidants that have control potential over some kinds of tumors. It has skin protection abilities, improves eyesight and boosts blood circulation. Overall, taro is a preventative crop against heart disease. Each corm contains 34 percent of manganese, 103 percent of the daily value of vitamin K for improved blood circulation and clotting, and 38 percent of Riboflavin. Vitamin A and C are relatively high at 30 and 63 percent of the daily value, respectively.

We source Ethiopia taro from family growers in the volcanic soils of the Great Rift Valley in the south and western regions. We only deal with farmers with between 0.5 to 1.5 hectares of land as they employ organic farming. For this reason, our crops grow under farm post and no chemical sprays.

We harvest Ethiopia taro roots in season about 6 to 8 months after planting. Our family growers use garden tools such as forks to gently ease the corm off its marshy ground. Because of the soft, moistened surface, there is little incidence of bruising. We then sort the best corms from the malformed ones. The next process is that of washing off the dirt and clinging roots in readiness for packing. We transfer the bulk bins containing the corms into the packing shed for grading purposes.

Our first grade of Ethiopia taro is between 1 and 1.5 kilogram per piece. Any lesser weight is packed separately as a different grade. We also ensure that the produce is fresh, smells organic and has juicy stuff if pricked. The corms are also quite firm to the touch.

We pack taro corms from Ethiopia in 10-kilo carton or cardboard boxes. Each corm is enclosed in a mesh that gives it a distinctive fresh appearance. The container also keeps it fresh during the marketing. We stock the produce in high containers for shipping to destinations like Europe and the Middle-east.

We store Ethiopia taro at temperatures above 10° Celsius. Freezing levels may cause instant rot and we understand this when we keep the packages well ventilated and free of ice. We transport the produce the same day of harvesting and grading using special trucks.
