We source our Ethiopia tamarind from the heart of Oromia zone. The Oromo people have been known throughout history as the custodians of medicinal herbs. Tamarind is just one of around 6500 species of medicinal plants that thrive in the horn of Africa country. In Oromia, the plant grows in both cultivated fields under irrigation and in the wild. For every medicinal tree available in Ethiopia, around 18 percent is constituted of herbs like tamarind and thyme.

Each serving of Ethiopia tamarind contains around 37 percent of the daily value of Thiamine or Vitamin B1. It also comes with around 22 percent of iron for boosting the oxygenated part of blood. The vitamin C content is minimal at 4% of the daily value, while that of Vitamin B2 or riboflavin stands at 113 percent of the daily requirements. Eating a single fruit per day gives the body a dietary fiber content equivalent to 5.1 grams. The carbohydrates content comes at 62.5 percent of the bodily requirements.

We pack the Ethiopia tamarind in bunches of around a dozen to 24 per box. Each box consists of around a half a bushel in size. To ensure there is little incidence of deterioration during transit, we pack the produce in plastic bags as well as clamshells that conserve moisture. We then keep them inside corrugated cartons. In most cases, polyethylene liners provide the circulation needed by the fresh produce and also overcome dehydration on transit. As a further precaution, we employ waxed boxes that consist of plastic interiors.

We also process tamarind oil from the Ethiopia herb. We usually transport the whole fruit to the processing plant. We then wash them before removing the seeds from the pulp. The next step is that of splitting the kernel covering the seeds. Once the outer hard shell or testa is out, we then crush the seeds into powder. The powder serves many purposes including in the manufacture of textile as well as commercial glues.

To conserve the tamarind for future uses, we also remove the oilseed and keep the shells separately. A single fruit contains around 7.6 percent of oil while that which has been de-oiled consists of 0.6 percent of the oil. The oil is rich in crude fiber at around 1.2% of the total composition.
