Ethiopia collard (member of Brassica oleracea) is a kale, cabbage and spinach-family leafy green that thrives throughout the year in the horn of Africa country. Unlike cabbages, they have an acephela formation, meaning no head or dome. In Ethiopia, they feature in harvests between October and January, the main harvest season in the country of most fresh produce. The collard greens feature in a common dish in the nation known as Ye’Abesha Gomen, short for Ethiopian Collard Greens. Another common recipe is the Gomen wat meal, which consists of the leafy greens, traditional herbs and olive oil for deep frying. The latter dish, particularly, made it to many Western restaurants, especially in the US.

The Ethiopia collard may have its origin in the East African plain, like its kale cousin, whose native home is Ethiopia. The kale came to the country as early as 4000 B.C.

Collards consist of relatively high levels of Vitamin C, at 58 percent of the daily value per person. They also contain 10 percent of Vitamin B6. Their mineral content is high, with the teeth enamel-enhancing calcium content being 23 percent. The leafy green also consists of a high percentage of dietary fiber, at 16 percent. The biggest nutritional value, however, comes from the high reserves of vitamin K, which reaches 388 percent of the daily value, per serving. Thus they are good for blood clotting.

Our family growers harvest the Ethiopia collards when the leaves have nearly attained 10 inches from the tip to the base. In Ethiopia, maturity happens at least 1 month and 15 days after transplanting. Our farmhands pick only the outer leaves that have not hardened to allow the inner ones develop further for the next harvest. All handling occurs in a phytosanitary manner, inclusive of glove-clad farmhands for the picking process.

We pack Ethiopia collard in crates of bunches of 20 to 25 pounds (10 to 12 kilograms). We also use produce cartons to feature the same size per carton. Every box or cartons contains between a dozen and 24 bunches that are blemish-free and fresh.

In order to reduce the formation of moisture on the walls of the boxes and cartons, we cover each interior with plastic or polyethylene linings. As an extra precaution, each package receives a kilogram or 2.2 pounds of ice between every four pounds of collards. This sometimes could be liquid ice that maintains coolness throughout the delivery process to your destination.

Before delivery, we pre-cool the produce at 0° Celsius (32 degrees Fahrenheit). We maintain a relative humidity of 90 to 95 percent to maintain freshness and overcome drying. In this condition, the collard greens can stay for as long as ten days in a fresh condition.
